Recipes from Le Coup de Grâce > Beef soup with tortellini and peas

A complete, comforting and generous meal that can be prepared without stress

When it's time to cook for my boys, I like having everything on hand to whip up a solid dinner without wasting any time. And that's exactly why I'm proud to announce my new collaboration with l’épicierThe online grocery store that has completely changed my cooking routine. The quality of their meats, their impeccable vacuum-sealed packaging, the freshness…

Ingredients

Prepare in advance

  1. In a large pot of boiling salted water, cook the tortellini until tender. Drain and set aside.

  2. In the same pan, add the French shallots, garlic and savory herbs from the Lower St. Lawrence and sauté for 3 to 4 minutes while stirring.

  3. Deglaze with white wine, scrape the bottom well and let it reduce for 1 minute to evaporate the alcohol.

  4. Next, add the beef broth, honey, peas, ground beef, and tortellini, then bring to a boil. Stir gently and simmer for 2 to 3 minutes to heat through. Adjust the seasoning and serve immediately!

Trick

I always use bouillon cubes to make my beef broth: it's quick, convenient, and gives a super flavorful result. And for an even stronger taste, I always add slightly more than suggested… because I like it when it REALLY tastes good!
